magnificient dandelions

(Healingtalks) To honor and add the regal dandelion in our diet, here are three wonderful recipes:

dandelions pestos

I – Johanna’s Dandelion Pesto

  • 1/4 pound wild dandelions
  • 1/2 cup of raw walnuts
  • 3 tbsp of virgin olive oil
  • juice of 1/2 lemon
  • salt, pepper, pinch of cayenne

II- Dandelion Flower Cookies from Wild Plant Ally Workbook:

    •  1 1/2 cups of soaked cashews
    • 1/4 cup agave or raw honey
    • 1 cup dandelion petals – Pluck the yellow petals
    • 1 tbs lemon juice (1/2 lemon)
    • 1/2 tablespoon vanilla extract
    • pinch of sea saltBlend together everything but the petals which are mixed in by hand
      and then make the batter into cookies to heat up slowly in your dehydrator
      at 105 degree temperature for 6 hours, flip and dehydrate for 2 hrs or longer
      for preferred crispiness

Theodore Kyriakou’s Fricassee of Green Dandelion Leaves

Equal amounts of three chopped greens with an olive oil and lemon dressing
  • dandelion greens
  • leek
  • romaine lettuce

dandelions saladFrench Herb Salad

Use a rich mix of:

  • escarole
  • green and red leaf lettuce
  • fresh tarragon and basil 
  • endive and romaine lettuce
  • dandelion
  • arugula leaves
  • and finally fresh dill
