Introducing Chef Sal

It’s really strange to see a 73 year-young man who is muscular and has black hair. Though he’s lived in the US for over 4 decades, he still reveals his European accent, having grown up in Amsterdam during World War II. Exiled on a farm, he fell in love with the fresh farm produce and has ever since made the best of fresh, whole foods the center piece of his diet and recipes. Chef Salomon Montezinos is extra-ordinary.

Raw and Alkaline

The recipes he prepares are also quite unusual. They’re raw and alkaline. In fact, he helped pioneered this culinary combination. Following this diet himself has helped him outperform his senior peers – exercising 4 hours a day by weight-lifting, biking, running, and performing yoga. In addition, not only can he swim a mile-plus in the pool, after other exercises, but he swims in alkalized water. He does not bathe in unfiltered tap water either, which he also alkalizes with a filter. Chef Sal implores that if he cannot drink it, he will not put his body in it.

Indeed, alkaline water is found throughout Chef Sal’s house. After exiting the pool, he often re-energizes with alkaline water from the custom-installed machine in his fridge. He appreciates too well the extra kick of energy it gives.

Chef Sal’s Work Schedule

As strange as it is to see this 73-year old swim for an hour, it is striking to watch him also work a 12+ hours shift preparing raw alkaline meals. He credits his system for keeping him so young, fit, and energized. After all our bodies are 60 percent water and the brain contains even more, namely 70 percent.

Chef Sal exemplifies the alkaline lifestyle. He has thus developed a following, as more people let go of conventional health paradigms.

Philosophy of Linking Nutrition To Raising Consciousness
Befoer getting into my raw living food recipe for a dehydrated salad, let me say a few words on my overall philosophy for using nutrition to heal. There are many paths to optimal healing. Nutrition is a major one. We have a choice to  focus on any and all major forms of healing – of  our consciousness, mind, emotions, body, relationships immediate others, society and our planet. In each venue healing  is really a process of reconnection to wholeness. This especially applies to foods, and has something to do with why we prefer whole foods. Now imagine that underlying everything in our universe there is consciousness as the unseen schemata that connects everything as a whole. When we heal, therefore, we simultaneously raise our consciousness or our connectedness within and without.  Each person’s approach to nutrition or diet, however,  has developed somewhat from the outside in, from an upbringing and the influence of their culture. Few  emphasize or are aware of the link between nutrition and raising consciousness.  Eating habits also become ingrained, as a matter of habit and comfort, and thus are quite difficult. My experience has been that the raw and living vegan food diet, along with other approaches (such as alternating nutrition with detoxification) will best support an evolving of one’s consciousness. To explain the rationale  really would involve explaining a entirely different model of nature. That model is a life-and-consciousness centered vision of nature (rather than matter, energy, atoms) are central.  But that discussion in is other posts and here would take us far afield.

Busy Making A New Recipe in My Kitchen
I am excited that tomorrow there is a pot luck get-together locally. See Albany, NY meetup. Thus  I was putting together a recipe to bring to this event. I truly feel it is important to network with others, to connect with those who share this approach. And so I thought why not also share this recipe with my blog readers. In my raw kitchen, the stove becomes largely defunct except for the heating of water to pour over some raw soup ingredients or to make other warm and soothing drinks, especially in the winter. Instead I use the juicer, bender, food processor and dehydrator as my primary appliances. We  may also have some special kitchen tools, like a little gadget to shed vegetables in a way as to mock spaghetti.

Raw Dehydrated Salad
My recipes are often a combination of pre-planning, having a certain idea in mind and shopping for those ingredients, plus adding what ever is left over in the frig – I am not ashamed to admit because this is a creative process that proceeds in the moment, moments of culinary inspiration. So here is the yummy raw and living food recipe to raise healing vibes which I concocted:

Main Ingredients:
2 Bunches         Kale Leaves (removed from stems & broken into smaller pieces)
1 Head              Cauliflower
1 Head              Broccoli
2                       Leaks (or one if you want less of an onion taste)
2 tablespoons    Hemp Oil
2 tablespoons     Almond Oil
6 heaping
tablespoons     Raw Almond Butter

Added Seasoning
3 teaspoons    Tuscan Sea Salt (full of added spices)
1/2 teaspoon   Cayenne Pepper
1/2 teaspoon   Miso-Cup (freeze-dried soup mix)
pinch              Oregano
pinch              Caribbean Spice Mix

Garnish
Edible flowers or whatever makes the dish savoring to the eyes.

Simple Instructions
Putting all the ingredients into a large mixing bowl and mix and massage them together with loving vibrations. I further add an optional quart of water and save the water for a latter healing drink.  Lastly put all the mixed ingredients into the dehydrator, put it on a low setting  like 95-100 and for just a few hours so as not to fully dry. Then you gotta-u-self a most yummy treat. My palate was later in Nirvana.

The top reasons for buying organic foods are as follows:

  • DOES NOT HARM OR DEPLETE OUR TOPSOIL The soil of our earth is the foundation of the whole human and environmental food chain. The typical organic farm is teaming with life – from butterflies, to frogs, to bees, to you name it. Conventional farms have polluted and depleted soils. They have rendered them sterile, using herbicides and pesticides to kill other life forms. Also through the vast degradation of our soil, we are losing cropland topsoil seven times faster than it is being replaced naturally.
  • PROTECT OUR WATERS
    Nearly 700 hundred toxic chemicals pollute our groundwater, many of them coming from agricutural pesticides and herbicides. These chemicals cause cancer and other debilitating  illnesses and are not removed by conventional means. Virtually all the drinking water in the US is polluted and 2/3rds of our own bodies are made up of water.
  • SAVES ENERGY
    Conventional farming methods use far more petroleum, both to create chemical fertilizers and to till, cultivate and harvest crops. Organic farms are more labor-intensive. Government subsidized conventional farms use 12% of the US total energy consumption. Ultimately we pay the far, far higher price either in taxes and/or the horrid devastation that yields global warming.
  • IMPACTS THE QUALITY OF OUR FOODS
    US agriculture uses more than 800 pounds of toxic pesticides alone. Over 3,000 chemicals are mixed  into our foods directly, and nearly 10,000 are used in the production and storing of foods. Most of these chemicals are harmful to our health. They may engender cancer, birth defects, neurological illnesses, dementia and other serious dysfunctions. According to the EPA, 60% of herbicides, 90% of fungicides and 30% of pesticides are carcinogenic. The National Academy of Sciences estimate as far back as 1987 that pesticides could cause over a million cancer cases in the US alone over our lifetimes. On the positive side, organic produce has repeatedly been proven to have higher levels of essential nutrients, being grow in more living, mineral-rich, composted soils.
  • PROTECTS FARM WORKERS
    Studies have shown a link between pesticide use and Parkinson’s disease, leukemia and cancers among farm workers. An NCI study found that farm workers employed on conventional farms had 6x higher risk of getting cancer. A California study showed that farm workers in the field had the highest occupational illnesses rates of all California workers.
  • IMPACTS  SMALL FARMERS’ SURVIVE
    Most organic farms are family-owned with less than a 100 acres. There has been a vast decimation of family farms for the past few decades. At the turn of the 20th century, farming was the primary livelihood in the US. Now it represents less than 1%. Organic farming remains among the last refuges for surviving family farms amid competition from large industrial farms that try to “cut-throat monopolize” the market. Over a million family farms have been lost over the last  couple decades.
  • REAL ECONOMIC COSTS
    Amid the illusions of the marketplace created by political forces, again many fail to see that organic foods are actually cheaper overall. First conventional farming is hugely subsidized and has hidden costs that are borne by all taxpayers. If you add the health and environmental costs, organic produce is really and truly the least expensive. We must remember that  in the US medical costs have risen from 5% to 16% of the GNP in the last 20 years. Then there is hazardous waste removal costs and that of toxic substance testing and regulation, soil erosion, loss of fertility, wildlife decimation, and so on and so forth ad infinitum. You get the picture.
  • PROMOTES BIODIVERSITY
    Organic farms tend to preserve heirloom varieties while large conventional farms do not and engage in sterile, mechanistic monocropping. The latter requires increasingly more lethal pesticide use as pest become resistant over time and crops become subject to wholesale blights. It was monocropping, followed by a blight, that caused the famous Irish potato famine.
  • EFFECTS  OUR CHILDRENS’ FUTURE
    Children ingest up to 4X the level of toxic residues compared to that of their parents. Tests have shown that exposure in early life, as early as in the womb , reveals residues in the placenta fluids. This often leads to much more cancer latter in life. The damage can be passed on genetically to affect all subsequent generations in a harmful way. This is why we need to detox or help our bodies get rid of lifetime toxic loads. If all-organic food buying seems expensive at first, consider skipping a meal to help your body detox. Or fast for a day. Or shop at a direct farmers market, plant your own organic home garden, work a few hours for your local food coop and/or farm in exchange, and so on. Be creative.   • AN UNWISE VISION OF NATURE
    All living forms have awareness because life’s foundation resides in a presence of consciousness. From tiny nano-bacteria to huge dinasours, living organisms have  awareness. This awareness forms, in my experience, the universal relationship of connection in all of nature, and ultimately the foundation of oneness that interconnects all living creatures. The mechanical worldview of the 17th century disrupts and destroys this weave. This is because its view is based on universally separative symbols (math symbols used to create the mechanical vision). The mechanical view is  thus based on opposite principles to those of life in nature. This is the root reason why when the mechanical vision is deeply (not surface) applied,  this unravels the connective weave of ecospheres. Actually the deeper applications threaten the sustainability of life on earth. This is further why toxic pesticides and herbicides are being banned in several nations.  Otherwise we  follow a death-delivering approach to farming – with carcinogenic impacts on our body and vast disruptions of surrounding nature.

Why turn to a life-centered vision of nature

(Healingtalks) The cosmology of many American Indians is filled solely with images of plants and animals because they had a living vision of the essence of nature. We have instead moved instead to a dead, machine-like, mechanical vision of nature.

This impacts every aspect of our lives…. especially our foods.

Living foods with enzymes

I have the great respect for Ann Wigmore, one of the founders of the raw food movement. One of the things she advocated was that we should eat living foods primarily for their  life-enhancing enzymes. These enzymes aide digestion. They also speed up countless chemical reactions in the body. If you heat a food over 11o degrees or more, the enzymes tend to die.

There is life in our foods symbolized by enzymes but also permeating throughout, as long as raw foods are not heated to high temperatures. If you roast an almond and plant it in the ground, for example, it will not grow an almond tree.

Not Reducible to Math/Mechanical Explanations

It has been my philosophy of life that life itself is at the core of nature, making up the interior essence of the world we live in – an essence brought out by living things. The conventional philosophy of nature’s essence is that it is mathematical, an essence brought out or displayed by the invention of machine. But to me math symbols are not infallible tools to discover nature’s essence. To me this is the most powerful of misguiding visions. Why? Because they simply put, symbols are pointing tools and math symbols point to universal relationships of separation in our consciousness. We cannot best connect a vision when point to patterns of separation in nature. The number one is the universal separate whole. Count three apples and then make apple sauce with them. Afterwards you can no longer count them because they are not any longer separate.

Math-designed things, like machines, tend to be dead

This because at the core of life is consciousness. What is that consciousness? For me it is a universal relationship of connection. I am conscious of something means I connect with it. But math symbols point oppositely! They thus would have the bias of pointing us away from what is life!

Chemical analysis (reducing nature to mathematics) will tell us there is no difference between a dead roasted almond… and a living non-roasted almond.

They just have the same potassium, calcium, magnesium and so on – and we are supposed to believe that that is all there is to nature.

A Life-Centered Understanding

There is a different way of looking at things, including the food we eat.

When we cut any whole food apart , some aliveness is thus lost. This is again because life is the concentrated presence of a conscious, thus whole organism, plant or animal.

Ultimately it is HUGE intellectual mistake to reduce life thus to mechanical (separate machine part-like or math-like) principles – the very principles whose universalization now threaten life on our planet. It is not accidental that Alzheimer’s patients routinely walk the halls of nursing homes like zombies after being given multiple synthetic chemical drugs that are math-designed.

Oh but some a new chemical cure is just around the corner to heal Alzheimer’s disease! Thus we fool ourselves into believing, following the modern ideology of nature. Actually we need a more enlightened understanding to uplift those who have fallen, including the Nobel Prize winning physicists and chemists who have died with Alzheimer’s disease. That fact, in itself, is very telling.

Why Consider Turning to a Raw Living Food Lifestyle

We need to bring out the living forces back out of their bodies’ consciousness. A living food diet is a royal means to enliven life.

 Role of fire

(Healingtalks) You might argue that the ability to produce and control fire is one of the hallmarks of human achievement. This applies to certain fields like mining where we melt down metals to form, for example, forks and knives. But fire can also burn a building down and so it has mixed effects.

Use of fire for our foods

The same applies to the use of fire in relationship to our foods. Fire can be used to soften the outer hardness of some foods to make them more digestible. We do this with root vegetables and with hard-skinned vegetables like artichokes. They are most often cooked before eating. But excess heat will also devitalize foods.   Heating food over somewhere between 110-120 or more degrees will harm enzymes and thus devalue the total nutritional value of a meal as a whole.

Alternative way of heating foods

An alternative way of heating is to use a dehydrator that is preset to a lower temperature. Even tubers, like potatoes, can be prepared for the dehydrator by grating, blending, and other means that do not involve cooking at high temperatures.

What’s the living food diet is all about

The living food diet is all about maximizing the same enzyme intakes or living forces.These natural elements assist the body in catalyzing what is necessary for many body functions, including the digestion and absorption of nutrients. As we get older, our bodies produce less and less enzymes so we need to take them in from outside sources to maintain our body’s vitality.
